на предприятии был изготовлен имитационный шпик в соотношении 1/ 10/ 20 где,

1 - маталгин

10 - шпиг свинной

20 - вода

Влажность данного шпига не превышает 65%

Изготовленный шпиг смешивается с мясом для приготовления мясного фарша.

Затем фарш закладываем в банки и стерилизуем при температуре 120 градусов цельсия.

Влажность готового продукта составляет более 78%,что недопустимо по регламенту ГОСТ.



Скажите пожалуйста ,как уменьшить влагу в готовом продукте,которая появляется после применения искуственного шпига до 65%


Если использовать настоящий шпиг,влажность готового продукта после стерилизации не превышает 65%.
