Основу питания большинства населения составляли зерновые и овощи, из которых готовились соленья, супы, каши и хлебобулочные изделия. Из ржаной, гороховой, и овсяной муки готовили кисели, причем сладкие кисели появились лишь позднее с приходом в русскую кухню картофельного крахмала.
