Unlike the European new year, Nowruz is celebrated traditionally by day, but certainly in the family circle. The most important day of the feast is the first, March 21. In the next thirteen days in Uzbekistan attending guests, visiting relatives, buy and plant seedlings of young fruit trees, are cheerful companies in the lap of spring nature. Chief among customs celebrating Novruz in Uzbekistan, remains new year's treat "sumalyak"-food, cooked over a wood fire from flour and germinated wheat grains, sometimes with the addition of spices. Sprouted grain symbolizes life, warmth, abundance and health.
