The third year of the project:-Identification of regularities of formation of the structures of protein ingredients and their songs when creating a farce. Determination of rheological and biochemical, microbiological indicators of dietary patterns to determine its safety.-The study of the influence of the bacteriostatic plant agents and antioxidants on antibacterial, diaphragm and other physico-chemical properties of the solutions of collagen/polysaccharide with different molecular weight protein and the ratio of components, as well as the physical and operational properties of gels and films based on them.
